The Food Capitals is pleased to welcome the City of Trinidad (Bolivia) as a new member of its international network as of January 2026, strengthening the shared ambition to promote local gastronomic identities on an international scale.
Capital of the Beni Department, Trinidad lies at the heart of Bolivia’s Amazon basin and is home to more than 130,000 inhabitants. Shaped by extraordinary biodiversity and the living heritage of the Mojeño–Trinitario people, the city’s gastronomy reflects a deep connection between food, territory, culture, and sustainability.
Trinidad’s cuisine is rooted in Amazonian rivers and landscapes, featuring freshwater fish, high-quality Beni beef, cassava, maize, plantains, native cacao, tropical fruits, and local chilies. These ingredients and culinary practices embody ancestral knowledge passed down through generations and remain central to everyday life, rituals, and festivities — including the Ichapekene Piesta, recognized by UNESCO as Intangible Cultural Heritage of Humanity.
Beyond tradition, Trinidad has made gastronomy a public policy priority. The city has launched initiatives such as a Traditional Gastronomy Workshop School, safeguarding policies for culinary heritage, and a Strategic Tourism Plan that positions food as a driver of sustainable tourism, youth training, and local economic development. This local commitment reflects Bolivia’s broader ambition to strengthen gastronomy as a pillar of cultural identity and development.

Trinidad brings a unique voice to the network’s international exchanges, projects, and events. The Food Capitals network will support the international visibility of Trinidad’s food culture while fostering collaborations with cities around the world.
