Elise Rabaey, Strategic Project Director for the city of Lausanne, and Anouck Marmy, Deputy CEO of Beaulieu Congress Center, work together on the development of a gourmet hall project. Their collaboration focuses on positioning gastronomy as a strategic driver of placemaking, destination attractiveness, and year‑round activation. Through this project, they explore how food-led spaces can create meaningful experiences, attract and retain local audiences, and appeal to visitors by fostering vibrant places of everyday life rooted in culinary culture.
Elise Rabaey and Anouck Marmy will present “Lausanne’s Gourmet Halls: More Than a Food Hall, a Gastronomic Destination” during the The Feast, The Flop, The Fix session.
