Laura Castoldi is a holistic chef representing the city of Callao and the founder of “I buoni sani”, a project which includes a small macrobiotic restaurant, cooking classes, conferences, and macrobiotic counseling. Formerly an interpreter, she retrained in gastronomy after her fight against two breast cancers, attended “La Sana Gola” in Milan, and has been pursuing a master's degree in nutrition and applied dietetics since March 2026. In July 2021, she published “La mia cucina contro il cancro” (My cuisine against cancer), sharing her experience about cancer and food.
